Healthy Halloween Chocolate Clusters

Healthy Halloween Chocolate Clusters

Halloween is right around the corner and though it is perfectly fine to treat yourself here and there, Halloween is overloaded with sugary carbs, high fat candies and that means very calorie dense treats that can throw you off right at the beginning of the holiday season.

How about you plan ahead and you bring a healthier Chocolate treat to the office, the halloween party or even keep in your house as you give away all the other chocolate and candy! Below is just the treat for you.  With antioxidant filled dark chocolate, whole grain rice cereal for a crunch, nuts for a healthy and filling fat, dried fruit for natural sugar and a sprinkle of fun colored sprinkles you’ll actually feel more festive than just opening a candy bar.

Healthy Halloween Chocolate Clusters

  • 1 1/2 cups dark chocolate chips (Try a Low Carb Chocolate like Lily's Sweets chips which are all natural and sweetened with stevia).
  • 1/4 cup chopped pistachios or your favorite nut! Cashews, peanuts, almonds, walnuts, or pecans all work.
  • 1/4 cup brown rice crispy cereal.
  • 1/4 cup dried cranberries
  • Colored sprinkles for decoration

  1. Line a large cookie sheet with parchment or wax paper and place in the freezer until ready to use.
  2. In a large microwave safe bowl, pour chips into the bowl, saving about 1/8 cup for later.
  3. Melt on high for 20 second increments.
  4. Take out and stir and microwave again for another 20 seconds.
  5. Continue to do this until the chocolate is melted and shiny. Try not to heat too high or the chocolate will seize.
  6. Stir in the 1/8 cup of remaining chips. Stir until all the chocolate is completely melted and again, shiny.
  7. Gently stir in all the other ingredient except for the sprinkle
  8. Take the cookie sheet out of the freezer and using a mini cookie scoop or two teaspoons drop mini clusters onto the sheet.
  9. When done, sprinkle with sprinkles!
  10. Then place the cookie sheet in the fridge for 10 minutes or until completely set.
  11. Take out, let sit at room temperature for 5 minutes. Enjoy!

Store these in a sealed container in the fridge for up to 4 days.
