Guilt Free Healthy Peppermint Bark

It’s that time of year! When everything switches from pumpkin to peppermint.  Peppermint has a list of health benefits as we discussed last week in our blog Tis the Season of Peppermint, but it can be  found in many indulgent foods.  From high calorie, sugary drinks, to desserts of all kinds, you will find peppermint flavored everything this time of year. Do not worry we got you covered with a delicious and guilt free peppermint bark recipes to get you in the holiday spirit!

Below are the ingredients and instructions to make this delectable treat!


Ingredients for Dark Chocolate Layer

2 cups full fat Plain Greek yogurt

1/2 cup agave divided

1 1/2 tsp peppermint extract or oil

1/4 cup plus 1 tbsp dark cocoa powder

A dash of salt


Ingredients for White Peppermint Layer

2 cups full fat Vanilla Greek yogurt

1/4 cup agave divided

1 tsp peppermint extract or oil

A dash of salt


Instructions

  1. Prepare a rimmed baking sheet with parchment paper and set aside.
  2. Start making the dark chocolate layer.  In a medium bowl combine Greek yogurt, dark cocoa powder, agave, peppermint extract, and dash of salt and mix well.
  3. Spread the Chocolate mixture onto the lined baking sheet.
  4. Place in the freezer for 30 minutes.
  5. During this time make the White Peppermint layer. In a clean bowl combine vanilla Greek yogurt, agave, peppermint extract, and dash of salt.
  6. Speak White Peppermint mixture over frozen chocolate layer and return to the freezer fr 3-4 hours or until solid.
  7. When frozen, break into bite size portions and freeze in an air-tight container for up to 2 months.
